Recipe from Mercy Chef Don Grace
Makes 4 entrée portions
Heat a medium size pot on medium heat and add olive oil and diced onion and cook until translucent. Add garlic, roasted peppers and all seasonings and cook about 5-7 minutes and add water. Heat to a simmer and reduce by a quarter then thicken with a cornstarch and water slurry until a nice sauce consistency blend smooth and cool.
Lightly coat tilapia with olive oil, season with salt and pepper and bake at 350 degrees for 7-10 minutes. Put tilapia on the plate and put ½ oz sauce over the top and serve over a bed of rice.
