Baked White Fish with Red Pepper Sauce

Recipe from Mercy Chef Don Grace

Makes 4 entrée portions


  • 4 - 4oz. Tilapia fillets
  • Olive oil
  • Salt and ground white pepper


  • 1 TBLS. Olive Oil
  • 1 TBLS. Minced Garlic
  • ¼ Cup Diced Yellow Onion
  • 12oz. Can Roasted Red Peppers or 2 whole fresh roasted red peppers
  • 1 tsp. Dried Basil
  • 1/4 tsp. Dried Thyme
  • 2 Cups vegetable stock or water
  • Salt and pepper to taste
  • Cornstarch slurry


Heat a medium size pot on medium heat and add olive oil and diced onion and cook until translucent. Add garlic, roasted peppers and all seasonings and cook about 5-7 minutes and add water. Heat to a simmer and reduce by a quarter then thicken with a cornstarch and water slurry until a nice sauce consistency blend smooth and cool.

Lightly coat tilapia with olive oil, season with salt and pepper and bake at 350 degrees for 7-10 minutes. Put tilapia on the plate and put ½ oz sauce over the top and serve over a bed of rice.
