Makes 4 entrée portions
Mandarin Orange Glaze
Glaze: Heat a medium size pot on low to medium heat and add the Splenda and Grand Marnier. Reduce by ½ and add the mandarin oranges. Heat to a simmer and thicken with a cornstarch and water slurry until a nice glaze consistency.
Stir Fry: Heat a medium size skillet on high heat and add olive oil, onions, red peppers and broccoli until veggies are al dente and deglaze with soy sauce. Add water chestnuts, mushrooms and baby corn and mandarin glaze heat until hot and serve on a plate with white rice.
