RECIPE: Zesty Lemon Chicken Skewers

Zesty Lemon Chicken Skewers

Recipe by Mercy's Chef Brad Bulot

Serves 6, two skewers per serving
  • 2 lbs. Chicken tenders, 99% fat free, raw
  • ¼ cup Juice, lemon, fresh
  • 1 TBLS. Lemon Zest
  • ½ cup Vodka, 100 proof
  • 3 TBLS. Honey, extracted
  • 1 TBLS. Extra virgin olive oil
  • 1 TBLS. Sea Salt
  • 1 tsp. Black pepper, ground
  • 2 tsp. Thyme, fresh 
Preheat oven to 425 degrees. Soak bamboo skewers in water.
Mix all ingredients (except chicken) in a gallon size freezer bag. Add chicken and seal. Mix to coat chicken and refrigerate for 2-6 hours to marinate.
Thread each tenderloin on the skewer using a back and forth motion. Lay skewered chicken in a single layer on a baking pan sprayed with pan release.
Bake about 30 minutes until chicken is browned and internel temperature is at least 165 degrees.
