St. John's Joplin gave co-workers a taste of Healthification. Mercy chef Gerard Campione of St. Louis was on site at St. John's cafeteria to let co-workers and visitors sample a healthy barley risoto dish as an alternative. The whole grain dish can be used as a substitue for white rice, pototaoes or other sidedishes. Out of the 110 co-workers and visitors to sample the dish, 108 said they liked it. Chef Campione said the dish would be used in the cafeteria and he would supply the recipe to co-workers upon request.
